You can delete the messages from your phone but if you have backed up the phone before the message was deleted, the message will still remain in the older backup files. I still have SMS messages from my first iPhone on the first day of the iPhone launch hanging around in the backups.
Some useful and informative information here.

If you have ever had you iPhone sync with iTunes, then you can get all the Text Messages that you had the last time you had it synced. Just connect it to iTunes and click on the summary tab. Then choose restore.
Besides, there are two ways to restore SMS messages from iPhone:
1."Directly scan and recover data from your iPhone"
a) Select the device to scan
B) Enter the DFU mode and then scan your iPhone 4
c) Preview and recover deleted iPhone text message
2. "scan and extract your iTunes backup file"
a) Choose iTunes backup and scan it
B) Recover deleted iPhone data

For restoring SMS messages, the right solution is recovering them as soon as possible with a data recovery software.
There are lost of recovery softwares nowadays, and the one I choose is Myjad iPhone Data Recovery tool.
It is easy to handle and powerful for recovering deleted SMS from iPhone. So once you need you can take a try.

If you have back up your sms, you can retrieve deleted text messages iPhone from the backup.
1.Open iTunes on your computer.
2.Plug in your iPhone to your computer just as you would to sync it normally.
Locate the iPhone in the "Devices" column at the left of the iTunes application window.
3.Right-click on the iPhone icon in the "Devices" column and select "Restore From Backup" Select one of the backup versions from the drop-down menu and click the "Restore" button. This will restore any photos that you have lost since your last sync in iTunes.

If you have no backup for your data on iPhone, iPhone Data Recovery software is your last shot! I used iPhone Data Recovery and it worked well. Give it a shot!
